Tintilia Del Molise, Colle Serano
A 100% organic Tintilia based wine Colle Sereno’s ‘Tintilia del Molise’ shows the true heart of the Molise region where it’s produced. Hand-harvested grapes are fermented over 8 to 10 days with regular pumping over to extract additional colour and flavour. Following fermentation the wine is allowed to age for 24 months in stainless steel before being bottled.
The final wine is ruby coloured with an intense nose showing flavours of cherry and plum typical to this grape variety. Additional notes of dried fruit, balsamic and forest floor also come through. On the palate, the 14% alcohol contributes to the body of the wine giving a rounded taste. Another fine example of what can be done with this unknown regional grape.
